Pesto Pasta Caprese

Hearty and flavorful pasta dish made with homemade Fresh Basil Pesto!  A great side dish or main course that goes together in 15 minutes!

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: about 8 cups

Serving Size: 3/4 to 1 cup

Pesto Pasta Caprese

Ingredients

  • 1# dry pasta cooked al dente (radiatori, cavatappi, penne)
  • 1 C salted pasta water
  • 3/4 C Fresh Basil Pesto
  • 1/2 C perlini mozzarella
  • 1/4 C grated parmesan
  • 1/2 C cherry tomatoes halved
  • fresh basil leaves to garnish
  • lemon zest optional

Instructions

  1. Cook pasta in heavily salted water to al dente
  2. drain all but 1 cup pasta water, set aside
  3. in the same pot stir in Fresh Basil Pesto
  4. stir in pasta water as needed to create a pesto sauce
  5. pour pesto pasta into a large serving bowl
  6. top with perlini mozzarella, grated parmesan and tomato halves
  7. garnish with fresh basil leaves and lemon zest before serving.
