Hearty and flavorful pasta dish made with homemade Fresh Basil Pesto! A great side dish or main course that goes together in 15 minutes!
Pesto Pasta Caprese
Ingredients
- 1# dry pasta cooked al dente (radiatori, cavatappi, penne)
- 1 C salted pasta water
- 3/4 C Fresh Basil Pesto
- 1/2 C perlini mozzarella
- 1/4 C grated parmesan
- 1/2 C cherry tomatoes halved
- fresh basil leaves to garnish
- lemon zest optional
Instructions
- Cook pasta in heavily salted water to al dente
- drain all but 1 cup pasta water, set aside
- in the same pot stir in Fresh Basil Pesto
- stir in pasta water as needed to create a pesto sauce
- pour pesto pasta into a large serving bowl
- top with perlini mozzarella, grated parmesan and tomato halves
- garnish with fresh basil leaves and lemon zest before serving.
