Sometimes, the simplest recipes are the best, and this is one of those recipes that uses pantry staples and comes together very quickly! Oatmeal Lemon Cream Bars combine texture and refreshing flavor and pare perfectly with a freshly brewed cup of coffee or afternoon tea. The sweetened condensed milk, also known as “nectar of the gods” according to my dear husband, is the simple base to the lemon cream, brightened with fresh lemon juice and zest! The crust and topping are a combination of brown sugar, butter and oats-need I say more?!?
INGREDIENTS
1/2 C (1 stick) Butter, softened
1 C Brown Sugar
1 C Bob’s Redmill 1 to 1 Gluten Free Flour
1 Tsp Baking Powder
1/2 Tsp Salt
1 C Bob’s Red Mill Gluten Free Old Fashioned Oats
1 (14 oz) Bordon Can Sweetened Condensed Milk certified, Gluten Free
Zest of 1 Lemon
Juice of 1 Lemon (1/4 C)
1 gentle squeeze of LOVE
CRUST and TOPPING
In a stand mixer, cream together softened butter and brown sugar. In a smaller bowl, combine flour, baking powder, salt and oats. With mixer on low, add flour/oat mixture to the butter/sugar mixture one tablespoon at a time until completely combined.
LEMON CREAM
In a small bowl, combine sweetened condensed milk, lemon zest and lemon juice and whisk until smooth and creamy.
Pre-heat oven to 350° F. In an 8×8 or 7×11 baking dish, spread and press 2/3 of the oat mixture into the bottom of the pan and part way up the side to create a well to hold the lemon cream. Fill well with lemon cream, and top with remaining oat mixture.
Bake for 20-25 minutes until topping is light golden brown. Cool completely before cutting into bars, store in the refrigerator.
You’ll notice these awesome little casseroles are not exactly standard baking dishes. I have been doing some product testing of Robert Gordon Products from Steelite International. These little guys measure 4″x 4″, 4 3/4″ x 3 3/4″ and 6″ x 6″. The two smallest pieces are perfect for individual servings and the larger piece is perfect for a party of four!
